Fermentation and ageing
Over 20 days of fermentation and maceration in marble tanks (10 hL) where autochthonous yeasts grow naturally; malolactic fermentation in barriques straight after racking, maturation in barriques for 18 months, refinemed for 6 months in the bottle.
Food matching
Suitable for first dishes made of Tuscan ragù, roasts and game. Best served at 16 – 18 °C.
Origin of name
This wine honours Mr Vincenzo Mazzeschi, (paternal great grandfather) a wood tradesman who was nicknamed "Fora Macchie" (Woodcutter in English).
